
20 minutes and dinner is done. Steaming boneless chicken thighs is fast, easy and probably healthy. In 20 minutes you get tender, juicy chicken and a lovely broth. Throw it over some steamed rice and serve. I love adding a few cherry tomatoes, additional coins of ginger and star anise if i want to get a little fancy with it. If you have a couple of gyozas knocking around in your freezer, throw those in there too.
Ingredients:
1 lb boneless skinless chicken thighs
1 inch knob ginger, peeled and grated
2 garlic cloves, grated
2 tablespoons soy sauce
1 tablespoon rice vinegar
Method:
Marinate chicken in soy sauce, ginger garlic and rice vinegar for at least 30 minutes but up to 24 hours.
In a heavy-bottomed pot, add 4 cups water, and place a veggie steamer inside. Bring to a strong simmer.
In a heat-safe plate, place marinated chicken and put the plate on top of the steamer.
Cover your pot with a lid. Let steam for 15-20 minutes.
In the meantime, cook rice or noodles and assemble any necessary garnishes.
Turn off the heat and remove the lid.
Serve over rice or noodles and garnish to your heart's desire
