
Ingredients:
1 lb ground chicken
1 grated onion
1/2 bunch parsley
5 cloves garlic
1 jalapeno
1 lemon, zest and juice
2 tablespoons green tahini
1/2 teaspoon sumac
1 tsp kosher salt
1 tsp pomegranate molasses
Method
using the large hole side of a box grater, grate one onion. using a clean kitchen towel, squeeze juice out of onion.
chopped fine or using a food processor chop parsley, jalapeno, garlic and lemon zest
in a bowl, combine ground chicken, grated onion, parsley mixture, tahini, lemon juice, sumac, salt and parsley. mix thoroughly.
cut pitas in half and carefully separate to make pockets
spoon a couple tablespoons of chicken mixture into pockets, pressing the pitas on top and bottom to create an even layer.
brush pitas with olive oil
heat a grill
grill pitas on both sides 4-5 mins per side, until chicken is cooked through.
serve w cous cous or a salad
