
Part of my Summer Cooking Bucket List! I've never been a fan of tuna melts but recently, my palate told me to try again. I wanted to bring in the flavors of a Po Boy or a Louisiana style fried shrimp platter.
Hardly even a recipe. Taste as you go. My only measured ingredients were the creole seasoning (1.5 tbsp) and two spicy dill pickles.
Ingredients:
1 can Albacore Tuna
2 scallions, sliced
1 shallot diced
2 spicy dill pickles, chopped
hot smoked paprika
cayenne
1.5 tbsp creole seasoning (I'm partial to The Spice House's blend)
Squeeze of lemon juice
Mayo
Dijon
Worcestershire
A few generous splashes of Crystal Hot Sauce
shredded cheese of choice (I used pepperjack)
Slice of bread
Method:
Mix it all together. Pop it on your bread.
Throw it under the broiler.
Call it a day.
